Ingredients
- 450g (1 lb) minced chicken
- 250 ml (1 cup) grated mozzarella
- 15 ml (1 tbsp) Cajun spice mix
- 1 egg
- ½ cup breadcrumbs
- Salt and pepper to taste
For English-style breading
- 125 ml (1/2 cup) flour
- 2 beaten eggs
- 250 ml (1 cup) breadcrumbs
- A little vegetable oil for pan cooking
Preparation
- In a bowl, mix the ground chicken, mozzarella, Cajun spices, egg, breadcrumbs, salt and pepper until well combined.
- Form balls of about 30 ml (2 stable tbsp) each to obtain bite-sized pieces.
- Coat each ball in flour, then in beaten eggs, and finally in breadcrumbs to coat them well.
- In the Air Fryer or in a hot pan over medium heat, cook the balls in a little oil, turning them regularly, and let them cook until the internal temperature reaches 74°C (165°F).
- Serve the croquettes with either sweet and sour sauce or hot sauce, to taste.
- The croquettes can be frozen before cooking. They can then be cooked directly from frozen by adding a few minutes to the cooking time.
