GRILLED CHICKEN AND LEMON FETTUCINI

Ingredients
- 500 g (17 oz) fettucini
- 2 chicken breasts, cut into thin strips
- 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 2 garlic cloves, chopped
- 2 lemons, juice and zest for 1
- 1 pinch cayenne pepper
- 125 ml (1/2 cup) chicken broth
- ¼ bunch parsley, leaves removed, chopped
- ¼ bunch basil, leaves removed, chopped
- 125 ml (1/2 cup) grated Parmesan cheese
- salt and freshly ground pepper to taste
Preparation
- In a large pot of boiling, salted water, cook the pasta according to the manufacturer's instructions.
- Meanwhile, in a hot frying pan, brown the chicken strips in Mycryo butter or the fat of your choice for 2 to 3 minutes.
- Add the garlic, lemon zest and juice, cayenne pepper and chicken stock and bring to the boil. Check the seasoning, then add the cooked pasta.
- Just before serving, add the parsley, basil and Parmesan.
