Grilled chicken and lemon fettucini

GRILLED CHICKEN AND LEMON FETTUCINI

Portions : 4 - Preparation : 10 minutes - Cooking : 15 minutes

Ingredients

  • 500 g (17 oz) fettucini
  • 2 chicken breasts, cut into thin strips
  • 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 2 garlic cloves, chopped
  • 2 lemons, juice and zest for 1
  • 1 pinch cayenne pepper
  • 125 ml (1/2 cup) chicken broth
  • ¼ bunch parsley, leaves removed, chopped
  • ¼ bunch basil, leaves removed, chopped
  • 125 ml (1/2 cup) grated Parmesan cheese
  • salt and freshly ground pepper to taste

Preparation

  1. In a large pot of boiling, salted water, cook the pasta according to the manufacturer's instructions.
  2. Meanwhile, in a hot frying pan, brown the chicken strips in Mycryo butter or the fat of your choice for 2 to 3 minutes.
  3. Add the garlic, lemon zest and juice, cayenne pepper and chicken stock and bring to the boil. Check the seasoning, then add the cooked pasta.
  4. Just before serving, add the parsley, basil and Parmesan.
