Supreme Pork Tenderloin

Ingredients

  • 1 pork fillet
  • 6 to 8 slices of bacon
  • 30 ml (2 tbsp) honey
  • 15 ml (1 tbsp) chopped garlic
  • 125 ml (1/2 cup) panko
  • 125 ml (1/2 cup) grated Parmesan cheese
  • 5 ml (1 tsp) dried oregano
  • Pepper to taste

Preparation

  1. Preheat oven to 200°C (400°F).
  2. In a hot skillet over medium heat, sear the pork tenderloin for 2 minutes per side. Remove from heat.
  3. On a cutting board, spread the bacon slices side by side. Place the fillet in the center, brush it with honey, add the garlic, season generously with pepper, and then roll everything up to form a tight sausage.
  4. In the same hot pan, sear the coated fillet again, 2 minutes on each side, to brown the bacon.
