Salmon
- 250 ml (1 cup) of steak spice mix
- 250 ml (1 cup) of maple sugar
- 250 ml (1 cup) of coarse pickling salt
- 1/2 skinless salmon fillet
The cream
- 125 ml (1/2 cup) of cream cheese
- The zest of half a lemon
- 60 ml (4 tbsp) chopped dill
- Salt and pepper to taste
The toppings
- A few bagel croutons
- A few sprigs of dill
- 125 ml (1/2 cup) of sliced grapes
Preparation
- In a bowl, mix the steak spices, maple sugar, and salt.
- In a gratin dish or on a baking sheet, spread part of the prepared mixture, place the salmon on top, cover with the rest of the mixture, cover with cling film and refrigerate for 24 to 36 hours.
- Rinse under cold running water and dry the salmon with absorbent paper.
- Place the salmon in a dish and leave it uncovered in the refrigerator for 12 to 24 hours to dry slightly.
- On the work surface, slice the salmon thinly.
- In a bowl, mix the cream cheese, lemon zest, dill, salt and pepper. Check the seasoning.
- In each plate, distribute the prepared cream cheese mixture, the salmon slices, a few bagel croutons, a few sprigs of dill and grape slices.
