Crispy Sausage Flautas

Flautas croustillantes aux saucisses

Ingredients

  • 4 mild or hot Italian sausages
  • 8 small wheat tortillas (15 cm / 6 in)
  • 500 ml (2 cups) shredded Tex-Mex cheese
  • 500 ml (2 cups) iceberg lettuce, thinly sliced
  • 30 ml (2 tbsp) mayonnaise
  • 15 ml (1 tbsp) hot sauce (to taste)
  • 15 ml (1 tbsp) lime juice
  • Salt and pepper to taste
  • Cooking oil

Preparation

  1. Cut the sausages in half lengthwise.
  2. In a hot skillet, grill each sausage half until golden brown. Remove and set aside.
  3. In a hot tortilla-sized skillet over medium heat, spread a thin layer of about 60 ml (4 tbsp) of grated cheese. Let it melt and toast for about 2 minutes.
  4. Place a tortilla on top of the melted cheese layer and cook for about 2 minutes. Repeat for each tortilla.
  5. Meanwhile, in a bowl, combine the lettuce, mayonnaise, hot sauce, lime juice, salt and pepper.
  6. Place half a sausage on each tortilla, then spread the lettuce mixture over the tortilla. Roll tightly.
  7. In a hot, lightly oiled pan, brown the flautas on each side for 1 to 2 minutes, until crispy.
