Ingredients
- 4 mild or hot Italian sausages
- 8 small wheat tortillas (15 cm / 6 in)
- 500 ml (2 cups) shredded Tex-Mex cheese
- 500 ml (2 cups) iceberg lettuce, thinly sliced
- 30 ml (2 tbsp) mayonnaise
- 15 ml (1 tbsp) hot sauce (to taste)
- 15 ml (1 tbsp) lime juice
- Salt and pepper to taste
- Cooking oil
Preparation
- Cut the sausages in half lengthwise.
- In a hot skillet, grill each sausage half until golden brown. Remove and set aside.
- In a hot tortilla-sized skillet over medium heat, spread a thin layer of about 60 ml (4 tbsp) of grated cheese. Let it melt and toast for about 2 minutes.
- Place a tortilla on top of the melted cheese layer and cook for about 2 minutes. Repeat for each tortilla.
- Meanwhile, in a bowl, combine the lettuce, mayonnaise, hot sauce, lime juice, salt and pepper.
- Place half a sausage on each tortilla, then spread the lettuce mixture over the tortilla. Roll tightly.
- In a hot, lightly oiled pan, brown the flautas on each side for 1 to 2 minutes, until crispy.
