General tao of salmon

GENERAL TAO OF SALMON

Portions : 4 - Preparation : 10 minutes - Cooking time : about 10 minutes

Ingredients

  • 400 g salmon, coarsely cubed
  • 250 ml (1 cup) cornstarch
  • 90 ml (6 tablespoons) cooking oil
  • 1 bell bell pepper, julienned
  • 500 ml (2 cups) cauliflower, florets
  • 4 green onion stalks, sliced
  • 60 ml (4 tbsp.) sesame seeds
  • 4 portions cooked white rice
  • Salt and pepper to taste
  • General Tao sauce
  • 125 ml (1/2 cup) brown sugar
  • 125 ml (1/2 cup) ketchup
  • 60 ml (4 tablespoons) vinegar
  • 60 ml (4 tbsp.) soy sauce
  • 15 ml (1 tbsp.) hot sauce
  • 2 garlic cloves, minced
  • 15 ml (1 tbsp.) fresh ginger, chopped
  • 30 ml (2 tbsp) sesame oil

Preparation

  1. In a bowl, combine salmon cubes and cornstarch.
  2. In a hot skillet, over high heat, brown salmon cubes in cooking oil for 2 minutes on each side. Remove and set aside.
  3. In the same hot skillet, sauté bell bell pepper and cauliflower for 3 to 4 minutes. Remove and set aside with salmon.
  4. In same hot skillet, add brown sugar, ketchup, vinegar, soy sauce, hot sauce, garlic, ginger, sesame oil and mix.
  5. Add 60 ml (4 tbsp.) water and stir to combine. Check seasoning.
  6. Add salmon and vegetables to skillet and toss to coat.
  7. Garnish with green onion, sesame seeds and serve with rice.
