INGREDIENTS
- 75 ml (5 tbsp) soy sauce
- 250 ml (1 cup) of honey
- 15 ml (1 tbsp) hot sauce
- (1) lime – zest and juice
- 60 ml (4 tbsp) rice vinegar
- 250 ml (1 cup) ketchup
- (2) red and yellow bell peppers, cut into large pieces
- (1/2) pineapple, cut into rectangles
- (1) red onion, sliced
- 60 ml (4 tbsp) canola oil
- (4) Quebec chicken breasts, in thin cutlets
- Salt and pepper to taste
The filling
- (4) servings of cooked rice or cooked noodles
- 60 ml (4 tbsp) sesame seeds
- (2) green onion stems, sliced
Preparation
- Preheat the barbecue to maximum.
- In a bowl, combine soy sauce, honey, hot sauce, lime juice and zest, rice vinegar, and ketchup.
- Add the chicken cutlets to the prepared sauce to coat well.
- In another bowl, combine the peppers, pineapple, onion rings, canola oil, salt, and pepper.
- On the barbecue grill, sear the vegetables for 5 minutes on each side. Set aside.
- Sear the chicken evenly, 2 to 3 minutes on each side.
- Serve the vegetables with rice or noodles. Add the chicken and garnish with sesame seeds and green onion.
