VEGAN MC AND CHEESE
Portions : 4 - Preparation : 65 minutes - Cooking : 10 minutes
Ingredients
- 250 ml (1 cup) cashews, unsalted
 - 1 l (4 cups) cooked potatoes, cubed
 - 125 ml (1/2 cup) canola oil
 - 15 ml (1 tablespoon) malt yeast
 - 30 ml (2 tablespoons) lemon juice
 - 4 portions macaroni pasta
 - salt and pepper to taste
 
Preparation
- Soak cashews for one hour in a large volume of water. Then drain.
 - Meanwhile, cook macaroni according to manufacturer's instructions. Drain pasta.
 - In the bowl of a food processor, blend cashews, potatoes, oil, malted yeast, lemon juice, salt and pepper. Check the seasoning of this vegan cheese.
 - Add the prepared vegan cheese to the macaroni dish.
