Nothing beats a slice of cake for an aperitif, right? This recipe will be perfect for fall, to share with friends or to slip into a lunch box. And in Quebec, we say: "to please everyone, add a little more bacon"!
Ingredients for a cake
- 180 g of flour
- 10 ml baking powder
- 3 whole eggs
- 100 ml of milk
- 50 ml canola oil
- 2 small sour apples, diced
- 150g smoked bacon
- 150g grated old cheddar cheese
- Salt / pepper.
Preparation
- Preheat oven to 180°C / 350°F.
- Grill the bacon slices for about 15 minutes in the oven. Set aside on a wire rack.
- In a bowl, using a whisk, mix the flour, baking powder and a pinch of salt.
- In the center of the flour, break the eggs, add the milk and oil, then mix until you obtain a smooth dough.
- Add the coarsely chopped bacon, diced apple, grated aged cheddar cheese, and pepper. Mix well.
- Pour the batter into a buttered and floured loaf pan or one lined with parchment paper.
- Bake for approximately 30 to 45 minutes. Check the center of the cake for doneness by inserting a knife. If necessary, cover with aluminum foil and continue baking.
- Once baked, remove the cake from the oven. Wait a few moments before removing from the mold, then let it cool on a wire rack.
- Enjoy warm, or perhaps with a glass of cider... or a good beer.
