Apple, bacon and aged cheddar bread

Nothing beats a slice of cake for an aperitif, right? This recipe will be perfect for fall, to share with friends or to slip into a lunch box. And in Quebec, we say: "to please everyone, add a little more bacon"!

Ingredients for a cake

  • 180 g of flour
  • 10 ml baking powder
  • 3 whole eggs
  • 100 ml of milk
  • 50 ml canola oil
  • 2 small sour apples, diced
  • 150g smoked bacon
  • 150g grated old cheddar cheese
  • Salt / pepper.

Preparation

  1. Preheat oven to 180°C / 350°F.
  2. Grill the bacon slices for about 15 minutes in the oven. Set aside on a wire rack.
  3. In a bowl, using a whisk, mix the flour, baking powder and a pinch of salt.
  4. In the center of the flour, break the eggs, add the milk and oil, then mix until you obtain a smooth dough.
  5. Add the coarsely chopped bacon, diced apple, grated aged cheddar cheese, and pepper. Mix well.
  6. Pour the batter into a buttered and floured loaf pan or one lined with parchment paper.
  7. Bake for approximately 30 to 45 minutes. Check the center of the cake for doneness by inserting a knife. If necessary, cover with aluminum foil and continue baking.
  8. Once baked, remove the cake from the oven. Wait a few moments before removing from the mold, then let it cool on a wire rack.
  9. Enjoy warm, or perhaps with a glass of cider... or a good beer.
