Autumn is here… It’s time for comforting breakfasts in soft pajamas while listening to the rain fall.
Ingredients for about fifteen pancakes
Pancake batter
- 1 cup flour
- 1 cup of milk
- 15 ml melted salted butter
- 5 ml baking powder
- 1 pinch of salt
- 30 ml brown sugar
- 2 eggs (separated).
Spiced Caramel
- 100 g of sugar
- 50 g salted butter
- 100 g of 35% cream
- 2.5 ml chili flakes
- 2.5 ml of ground cinnamon
- 2.5 ml of cardamom powder.
Apple Topping
- 1 crisp apple, diced
- 60 ml dried cranberries
- 60 ml sultana raisins
- 60 ml of crushed and roasted pecans
- 60 ml maple syrup
- 15 ml butter
- 1 pinch of fleur de sel.
Preparation
- Prepare the dough the day before (or let it rest for at least 2 hours). In a bowl, using a whisk, combine the flour, brown sugar, baking powder, and a pinch of salt. Add the milk, melted butter, and 2 egg yolks to the center. Mix.
- Beat the egg whites until stiff. Gently fold them into the first mixture using a spatula. When the mixture is smooth, cover it with plastic wrap and refrigerate overnight.
- In a small saucepan over medium heat, melt the butter with the maple syrup. Add the diced apples and caramelize. Remove from heat and stir in the cranberries, raisins, and walnuts. Set aside.
- In a heavy-bottomed saucepan, melt the sugar over medium heat. When the caramel turns amber, add the cubed butter and cream off the heat. Stir, then return to the heat until the mixture is smooth. Add the spices off the heat. Be careful, it's very hot!
- In an oiled frying pan, cook the pancakes (about 10 cm in diameter) over low heat. Let them rise until bubbles appear, then turn over to cook the other side.
- To assemble, allow 4 pancakes per person. Arrange them on each plate, drizzle with warm caramel, and top with the apple and dried fruit mixture. Serve immediately.
Tips
- Preparing the dough the day before allows the flour to rise well.
- Beating the egg whites makes the pancakes very fluffy.
- You can add a small knob of butter when cooking the pancakes: they will be slightly crispy.
- For the caramel spices, adjust according to your taste.
