CREAMY SHRIMP AND ZUCCHINI P TES
Portions : 4 - Preparation : 10 minutes - Cooking : 10 minutes
Ingredients
- 4 portions spaghetti
 - 2 zucchini, cubed
 - 1 clove garlic, minced
 - 15 ml (1 tablespoon) tomato paste
 - 60 ml (4 tbsp.) olive oil
 - 24 shelled shrimp 31/40
 - 125 ml (1/2 cup) 35% cream
 - 60 ml (4 tbsp.) capers
 - 8 basil leaves, chopped
 - 60 ml (4 tbsp) grated Parmesan cheese
 - salt and pepper to taste
 
Preparation
- In a pot of boiling, salted water, cook pasta according to manufacturer's instructions.
 - Meanwhile, in a hot skillet, sauté zucchini cubes, garlic and tomato paste in olive oil for 2 minutes. Add the shrimps and cook for a further 2 minutes.
 - Add the cream, capers, salt and pepper and mix. Check seasoning.
 - Add the pasta and basil to the pan and toss.
 - Sprinkle with Parmesan cheese before serving.
