BBQ AND PESTO ROSSO PIZZA
Portions : 4 - Preparation : 10 minutes - Cooking : 5 minutes
Ingredients
- 250 ml (1 cup) sun-dried tomatoes
- 45 ml (3 tablespoons) walnuts
- 1 clove garlic, peeled
- 125 ml (1/2 cup) olive oil
- 60 ml (1/4 cup) grated Parmesan cheese
- 2 balls pizza dough
- 2 balls mozzarella, sliced
- Qs basil leaves
- salt and pepper to taste
Preparation
- Preheat the BBQ to maximum.
- In food processor or using hand blender, puree sun-dried tomatoes, walnuts, garlic, olive oil, Parmesan cheese, salt and pepper. Check seasoning.
- Lay out the pizza dough on the work surface.
- Place the pizza dough on the BBQ grill and cook for 1 minute. Then turn over and cook for a further 1 minute.
- Spread the prepared pesto and mozarella slices over each dough.
- Turn off the burner on one side of the BBQ and place the pizzas on the grill on the same side. Close the lid and cook for 2-3 minutes.
- Add the basil just before serving.
