Pizza with bbq and pesto rosso

BBQ AND PESTO ROSSO PIZZA

Portions : 4 - Preparation : 10 minutes - Cooking : 5 minutes

Ingredients

  • 250 ml (1 cup) sun-dried tomatoes
  • 45 ml (3 tablespoons) walnuts
  • 1 clove garlic, peeled
  • 125 ml (1/2 cup) olive oil
  • 60 ml (1/4 cup) grated Parmesan cheese
  • 2 balls pizza dough
  • 2 balls mozzarella, sliced
  • Qs basil leaves
  • salt and pepper to taste

Preparation

  1. Preheat the BBQ to maximum.
  2. In food processor or using hand blender, puree sun-dried tomatoes, walnuts, garlic, olive oil, Parmesan cheese, salt and pepper. Check seasoning.
  3. Lay out the pizza dough on the work surface.
  4. Place the pizza dough on the BBQ grill and cook for 1 minute. Then turn over and cook for a further 1 minute.
  5. Spread the prepared pesto and mozarella slices over each dough.
  6. Turn off the burner on one side of the BBQ and place the pizzas on the grill on the same side. Close the lid and cook for 2-3 minutes.
  7. Add the basil just before serving.
