BBQ CHICKEN WITH CREAM SAUCE

Ingredients
- 60 ml (4 tablespoons) olive oil
- 1 pinch cayenne pepper
- 15 ml (1 tablespoon) paprika
- 15 ml (1 tbsp.) Cajun spice blend
- 1 lime, zest
- 60 ml (4 tbsp.) wine vinegar
- 4 Québec chicken breasts, coarsely cubed
- 16 cherry tomatoes
- 4 portions BBQ or oven-roasted potatoes
- Salt and pepper to taste
- 8 skewers
Onions
- 125 ml (1/2 cup) white vinegar
- 125 ml (1/2 cup) sugar
- 45 ml (3 tbsp.) salt
- 2 red onions, sliced
- 120 ml (8 tbsp.) plain Greek yogurt
- 1 clove garlic, minced
- 30 ml (2 tbsp.) parsley leaves, chopped
- Salt and pepper to taste
Preparation
- Preheat the BBQ to maximum.
- In a bowl, combine olive oil, cayenne pepper, paprika, Cajun spices, lime zest, wine vinegar, salt and pepper.
- Add the chicken cubes to the mixture, to coat. Alternately skewer the chicken cubes and tomatoes on 8 skewers.
- Cook the skewers on the BBQ grill for 4 minutes on each side. Set aside.
- Meanwhile, prepare the onions: in a pot of boiling water (2 l / 8 cups), add the white vinegar, sugar and salt and plunge in the onion rings, letting them cook for 3 to 4 minutes. Then drain.
- Mix all yogurt sauce ingredients in a bowl. Check seasoning.
- Place the roasted potatoes on a platter, add the chicken skewers, cover with the yogurt sauce and sprinkle with the onion rings.
