Brioche and Red Berry Pudding

This recipe is a great way to use up leftover bread. It's more delicious with fruit than traditional French toast. It'll be even more delicious if you use brioche instead of bread!

Ingredients (for 4 people)

  • 6 slices of stale brioche
  • 1 cup of milk
  • 2 eggs
  • 40 g caster sugar
  • 1 sachet of vanilla sugar
  • 1 cup frozen berries
  • 20 g of soft butter
  • 15 ml icing sugar

Preparation

  1. Preheat oven to 350°F / 180°C.
  2. Cut the brioche slices diagonally to create triangles.
  3. In a bowl, using a whisk, mix the caster sugar and vanilla sugar with the eggs, then add the milk.
  4. Butter a baking dish, arrange the brioche slices and add the red fruits.
  5. Pour the milk-egg-sugar mixture over the preparation.
  6. Bake for 20 to 25 minutes, until golden brown.
  7. Remove from the oven and let cool. Sprinkle with icing sugar before serving.
