CREAMY SALMON WITH BRUSSELS SPROUTS
Portions : 4 - Preparation : 20 minutes - Cooking : 15 minutes
Ingredients
- 24 Brussels sprouts, halved
 - 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
 - 1 lemon, juice
 - 2 garlic cloves, minced
 - 30 ml (2 tbsp.) butter
 - 4 salmon steaks
 - 250 ml (1 cup) 35% cream
 - 30 ml (2 tbsp.) white balsamic vinegar
 - 15 ml (1 tbsp) pink pepper, chopped
 - 1 pinch herbes de Provence blend.
 - 1 pinch cayenne pepper
 - salt and pepper to taste
 
Preparation
- In a hot skillet over high heat, brown the Brussels sprouts in Mycryo butter or the fat of your choice for 2 to 3 minutes.
 - Over low heat, add lemon juice, half the garlic, butter, salt and pepper and cook for 8 minutes. Check seasoning.
 - Meanwhile, in another hot frying pan, sear the salmon coated with Mycryo butter or the fat of your choice for 2 minutes on each side.
 - Over medium heat, add the cream, balsamic vinegar, pink pepper, herbes de Provence, cayenne pepper and remaining garlic and reduce slightly to coat the fish. Check seasoning.
