Spaghetti with spicy tomatoes and bacon

Spaghetti aux tomates épicées et bacon

Ingredients

  • 12 slices of bacon, cut into small pieces
  • 8 tablespoons (120 ml) olive oil
  • 4 cloves garlic, chopped
  • 5 ml (1 tsp) chili flakes
  • 250 ml (1 cup) grated carrot
  • 1 onion, chopped
  • 750 ml (3 cups) tomato puree
  • 1 bunch of parsley, chopped
  • 4 portions of spaghetti, cooked al dente
  • 500 ml (2 cups) cheese curds
  • Salt and pepper to taste

Preparation

  1. In a skillet, cook the bacon pieces until crispy. Set aside on paper towels.
  2. In a pan, heat the olive oil and add the garlic and chili flakes and let it infuse for 1 minute.
  3. Add the carrot and onion and cook for 2 to 3 minutes.
  4. Add the tomato puree, reduce the heat and simmer for 10 minutes.
  5. Add the parsley and check the seasoning with salt and pepper.
  6. Add the cooked pasta to the sauce and mix well.
  7. Add the bacon and cheese curds and mix. Serve immediately.
