Tagliatelle with grilled eggplant

TAGLIATELLE WITH GRILLED EGGPLANT

Ingredients

  • 4 portions fresh or commercial pasta
  • 1 eggplant, sliced
  • 1 onion, sliced
  • 2 garlic cloves, chopped
  • 90 ml (6 tablespoons) 35% cream
  • 60 ml (4 tablespoons) capers
  • 12 cherry tomatoes, cut into 4
  • 2 pinches herbes de Provence
  • 30 ml (2 tbsp.) basil, chopped
  • 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 120 ml (8 tablespoons) grated Parmesan cheese
  • Salt and pepper to taste

Preparation

  1. Preheat the BBQ to maximum.
  2. Cook pasta according to manufacturer's instructions.
  3. Meanwhile, season eggplant and onion slices with salt and pepper and coat with fat.
  4. On the BBQ grill, grill the vegetables for 1 to 2 minutes on each side.
  5. In a hot skillet, add the grilled eggplant and onion, garlic, cream and capers and cook for 2
  6. minutes.
  7. Add the cherry tomatoes, herbes de Provence, basil and cooked pasta.
  8. Check seasoning and sprinkle with Parmesan.
