TAGLIATELLE WITH GRILLED EGGPLANT

Ingredients
- 4 portions fresh or commercial pasta
- 1 eggplant, sliced
- 1 onion, sliced
- 2 garlic cloves, chopped
- 90 ml (6 tablespoons) 35% cream
- 60 ml (4 tablespoons) capers
- 12 cherry tomatoes, cut into 4
- 2 pinches herbes de Provence
- 30 ml (2 tbsp.) basil, chopped
- 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 120 ml (8 tablespoons) grated Parmesan cheese
- Salt and pepper to taste
Preparation
- Preheat the BBQ to maximum.
- Cook pasta according to manufacturer's instructions.
- Meanwhile, season eggplant and onion slices with salt and pepper and coat with fat.
- On the BBQ grill, grill the vegetables for 1 to 2 minutes on each side.
- In a hot skillet, add the grilled eggplant and onion, garlic, cream and capers and cook for 2
- minutes.
- Add the cherry tomatoes, herbes de Provence, basil and cooked pasta.
- Check seasoning and sprinkle with Parmesan.
