Ingredients for 4 people
- 50 g + 10 g soft butter
- 50 g + 10 g sugar
- 50 g flour
- 50 g almond powder
- 4 apples, peeled and cut into small cubes
- 120 ml amaretto
- 100 ml apple juice
- 300 ml 35% whipping cream
Preparation
- Mix the cream and apple juice. Pour into a siphon. Shake and refrigerate for 2 hours.
- In a bowl, mix the 50 g flour, soft butter, sugar and almond powder with your fingertips. The dough should have a sandy consistency.
- Cook the apples in a frying pan with the remaining butter and sugar. Add the amaretto and carefully flambé. Set aside.
- Arrange the apples in an ovenproof dish, then spread the crumble mixture over the top.
- Place in the oven and bake for around 15 minutes, until the crumble is golden brown.
- Serve warm with the apple chantilly.
