Apple Flambé Crumble with Amaretto and Apple Juice Chantilly

Crumble de Pommes Flambées à l’Amaretto et Chantilly au Jus de Pomme

Ingredients for 4 people

  • 50 g + 10 g soft butter
  • 50 g + 10 g sugar
  • 50 g flour
  • 50 g almond powder
  • 4 apples, peeled and cut into small cubes
  • 120 ml amaretto
  • 100 ml apple juice
  • 300 ml 35% whipping cream

Preparation

  1. Mix the cream and apple juice. Pour into a siphon. Shake and refrigerate for 2 hours.
  2. In a bowl, mix the 50 g flour, soft butter, sugar and almond powder with your fingertips. The dough should have a sandy consistency.
  3. Cook the apples in a frying pan with the remaining butter and sugar. Add the amaretto and carefully flambé. Set aside.
  4. Arrange the apples in an ovenproof dish, then spread the crumble mixture over the top.
  5. Place in the oven and bake for around 15 minutes, until the crumble is golden brown.
  6. Serve warm with the apple chantilly.
