Cook time: 10 minutes
Ingredients
Glazed Salmon
- 4 salmon fillets
- 30 ml (2 tablespoons) Chili Crisp
- 60 to 90 ml (4 to 6 tablespoons) honey
- 30 ml (2 tablespoons) soy sauce
- 3 cloves garlic, finely chopped
- 250 ml (1 cup) panko breadcrumbs
- 15 ml (1 tablespoon) vegetable oil
- Salt and freshly ground black pepper, to taste
The Crisp Salad
- 1 English cucumber, cut into thin half-moons
- 2 carrots, julienned
- 1 red onion, finely sliced
- 60 ml (¼ cup) fresh cilantro, chopped
- 1 lime, zest and juice
- 15 ml (1 tablespoon) rice vinegar
- 15 ml (1 tablespoon) white sugar
- Salt, to taste
To serve
- 750 ml (3 cups) cooked white rice, kept warm
Preparation
- Using a fine grater, zest the lime, then squeeze out its juice. In a bowl, combine the cucumber, carrots, red onion, cilantro, lime zest and juice, rice vinegar, sugar, and salt. Set aside in the refrigerator.
- In a dry skillet over medium heat, toast the panko breadcrumbs, stirring frequently, until golden brown. Transfer to a bowl and set aside.
- Shake the Chili Crisp in its jar to distribute the oil and crispy bits evenly. In a bowl, combine the Chili Crisp, honey, soy sauce, and garlic. Set aside.
- Pat the salmon fillets dry with paper towels. Season lightly with salt and pepper. In a skillet over medium-high heat, heat the vegetable oil and sear the salmon fillets for about 2 minutes on the first side.
- Gently flip the fillets, reduce the heat to medium, and add the prepared sauce. Continue cooking for about 5 to 6 minutes, depending on the thickness of the fillets, basting the salmon regularly with the sauce. The sauce should thicken gently and become glossy. If it reduces too quickly, add a little water and lower the heat.
- During the last minute of cooking, sprinkle the toasted panko breadcrumbs over the salmon fillets, without basting them with sauce, to keep them crispy.
- On each plate, arrange the hot white rice, the crisp salad, and the salmon fillets. Drizzle a little sauce around the edges and serve immediately.
