Mediterranean Pasta Salad with Shrimp

Salade de pâtes méditerranéenne aux crevettes

Ingredients

  • 12 to 16 Argentine pink shrimp
  • 1 box of macaroni
  • 1 green bell pepper, finely diced
  • 250 ml (1 cup) crumbled feta cheese
  • 2 tomatoes, diced
  • 1 clove garlic, minced
  • 1 red onion, finely chopped
  • 125 ml (1/2 cup) olive oil
  • 1 lemon (zest and juice)
  • 15 ml (1 tbsp) honey
  • 500 ml (2 cups) baby spinach leaves
  • 5 ml (1 tsp) dried oregano
  • Salt and pepper to taste


Preparation

  1. Cook the pasta in a large pot of salted water according to package directions, then drain and let cool.
  2. Meanwhile, quickly sear the shrimp in a skillet with a drizzle of oil, about 1 minute per side, just to warm them through without overcooking, then let cool slightly.
  3. In a large bowl, combine the garlic, lemon juice and zest, honey, oil, and oregano to make the dressing. Add the cooled pasta, shrimp, bell pepper, tomatoes, red onion, spinach, and feta. Gently toss to coat all the ingredients evenly.
  4. Season with salt and pepper to taste and serve.
