Ingredients
- 125 g (1 ¼ cups) graham cracker crumbs
- 45 ml (3 tablespoons) melted butter
- 250 g (8 oz) cream cheese, softened
- 125 ml (½ cup) pumpkin puree
- 60 ml (¼ cup) FitCook Le Cozy syrup
- 1 egg
- 5 ml (1 teaspoon) vanilla extract
- 2.5 ml (½ teaspoon) ground cinnamon
- 1 pinch of salt
- FitCook Le Cozy syrup, for serving
Preparation
- Preheat the oven to 165 °C (325 °F). Place 12 paper liners in a muffin pan.
- In a bowl, mix the graham cracker crumbs with the melted butter. Divide the mixture among the liners and press firmly to form a crust.
- In another bowl, whip the cream cheese until smooth. Add the pumpkin puree and FitCook Le Cozy syrup, then mix until the mixture is smooth and well combined.
- Add the egg, vanilla, cinnamon, and salt. Mix just enough to incorporate the ingredients.
- Spread the filling over the crusts and lightly smooth the top.
- Bake for 20 to 22 minutes, until the sides are set and the center is still slightly jiggly.
- Let cool completely, then refrigerate for at least 2 hours.
- Just before serving, drizzle a small amount of FitCook Le Cozy syrup over each bite-sized piece.
