Rouleau croustillant banane-beurre d’arachide et bacon

Servings: 2
Preparation time: 10 minutes
Cooking time: 8 minutes

Ingredients

  • 4 slices white bread
  • 2 bananas (whole or halved, depending on size)
  • 1/2 cup peanut butter
  • 4 to 6 slices bacon, cooked until crisp and finely chopped
  • 1 egg
  • 1/2 cup (125 ml) milk
  • 1 tablespoon (15 ml) maple syrup
  • 1/2 teaspoon (2 ml) vanilla extract
  • Pinch of salt
  • Pinch of cinnamon
  • 2 tablespoons (30 ml) butter for cooking
  • Maple syrup for serving

Preparation

  1. On a work surface, use a rolling pin to flatten each slice of white bread until very thin and pliable.
  2. Spread a generous layer of peanut butter over the entire surface of each slice of bread and sprinkle with chopped crispy bacon.
  3. Place a whole banana or half a banana, depending on size, on the edge of each slice of bread and roll the bread tightly around the banana to form a roll.
  4. In a bowl, beat the egg, milk, maple syrup, vanilla, pinch of salt, and cinnamon until you have a mixture similar to French toast batter.
  5. Quickly dip each roll into the mixture to coat it well.
  6. In a skillet over medium heat, melt the butter, then brown the rolls, turning them gently so that all sides become crispy and golden, about 6 to 8 minutes.
  7. Remove from the skillet and drizzle with a little maple syrup.
