Ingredients
- 4 slices white bread
- 2 bananas (whole or halved, depending on size)
- 1/2 cup peanut butter
- 4 to 6 slices bacon, cooked until crisp and finely chopped
- 1 egg
- 1/2 cup (125 ml) milk
- 1 tablespoon (15 ml) maple syrup
- 1/2 teaspoon (2 ml) vanilla extract
- Pinch of salt
- Pinch of cinnamon
- 2 tablespoons (30 ml) butter for cooking
- Maple syrup for serving
Preparation
- On a work surface, use a rolling pin to flatten each slice of white bread until very thin and pliable.
- Spread a generous layer of peanut butter over the entire surface of each slice of bread and sprinkle with chopped crispy bacon.
- Place a whole banana or half a banana, depending on size, on the edge of each slice of bread and roll the bread tightly around the banana to form a roll.
- In a bowl, beat the egg, milk, maple syrup, vanilla, pinch of salt, and cinnamon until you have a mixture similar to French toast batter.
- Quickly dip each roll into the mixture to coat it well.
- In a skillet over medium heat, melt the butter, then brown the rolls, turning them gently so that all sides become crispy and golden, about 6 to 8 minutes.
- Remove from the skillet and drizzle with a little maple syrup.
