Ingredients
- 4 salmon fillets
- 125 ml (1/2 cup) sugar
- 125 ml (1/2 cup) fine salt
- 125 ml (1/2 cup) Parmesan cheese, grated
- 125 ml (1/2 cup) mayonnaise
- 125 ml (1/2 cup) panko breadcrumbs
- 90 ml (6 tbsp) fresh parsley, chopped
- 1 lemon, zest and juice
- 60 ml (4 tbsp) honey
- 2.5 ml (1/2 tsp) cayenne pepper
- Salt and pepper to taste
Preparation
- In a bowl, mix the sugar and salt.
- Coat the salmon fillets completely with this mixture and let sit for 30 minutes.
- Preheat the oven to 200°C (400°F) with the rack in the center.
- Rinse the fillets under cold water, then pat dry.
- In a bowl, combine the Parmesan, mayonnaise, panko breadcrumbs, parsley, lemon zest, and pepper.
- Spread this mixture over the top of each salmon fillet, pressing down lightly to form a crust.
- Place the fillets on a baking sheet lined with parchment paper or a silicone mat and bake in the oven for about 10 minutes. Then finish by broiling under the oven broiler for 2 minutes to brown the crust.
- Meanwhile, in a bowl, mix the honey, cayenne pepper, and lemon juice.
- Once out of the oven, brush the salmon fillets with this spiced honey mixture.
Serve with green vegetables and rice.
