  • 125 ml (1/2 cup) Parmesan cheese, grated
  • 125 ml (1/2 cup) mayonnaise
  • 125 ml (1/2 cup) panko breadcrumbs
  • 90 ml (6 tbsp) fresh parsley, chopped
  • 1 lemon, zest and juice
  • 60 ml (4 tbsp) honey
  • 2.5 ml (1/2 tsp) cayenne pepper
  • Salt and pepper to taste

Preparation

  1. In a bowl, mix the sugar and salt.
  2. Coat the salmon fillets completely with this mixture and let sit for 30 minutes.
  3. Preheat the oven to 200°C (400°F) with the rack in the center.
  4. Rinse the fillets under cold water, then pat dry.
  5. In a bowl, combine the Parmesan, mayonnaise, panko breadcrumbs, parsley, lemon zest, and pepper.
