Ingredients
- 200 g halloumi
- 2 ciabatta rolls
- 125 ml (1/2 cup) hummus
- 125 ml (1/2 cup) thinly sliced zucchini
- 125 ml (1/2 cup) sliced eggplant
- 60 ml (1/4 cup) roasted bell pepper, cut into strips
- 15 ml (1 tbsp) honey or maple syrup
- 15 ml (1 tbsp) lemon juice
- 15 ml (1 tbsp) olive oil
- Salt and pepper to taste
Preparation
- Slice the zucchini and eggplant and cook them in a skillet with a little oil until golden brown and tender, then set aside.
- In the same skillet, grill the halloumi slices with the oil for a few minutes on each side until nicely browned.
- Slice open the ciabatta rolls and warm them slightly if desired.
- Spread the hummus, add the grilled vegetables, place the halloumi on top, add the roasted peppers, then drizzle with a little honey or maple syrup and lemon juice, season with salt and pepper, close the rolls, and serve immediately.
