Pastrami smoked salmon, avocado and feta toast

Ingredients

  • 1 package of pastrami smoked salmon (100 g)
  • 4 slices of country bread
  • 30 ml (2 tbsp) olive oil
  • 1 ripe avocado, mashed
  • 8 cherry tomatoes, halved
  • 30 ml (2 tbsp) crumbled feta cheese
  • 15 ml (1 tbsp) finely chopped French shallot or red onion
  • 15 ml (1 tbsp) chopped green onion or chives
  • 15 ml (1 tbsp) honey
  • 15 ml (1 tbsp) white balsamic vinegar
  • Salt and pepper to taste

Preparation

  1. Brush the bread slices with olive oil, season with salt and pepper, then grill them in a hot pan for 2 to 3 minutes on each side until golden brown. Remove from heat and let cool.
  2. Spread with avocado puree, place the slices of smoked salmon pastrami on top, add the cherry tomatoes, feta, shallot or red onion, then the green onion or chives.
  3. Season, then add a drizzle of white balsamic vinegar and a drizzle of honey.
  4. Serve immediately.
