CHICKEN AND AVOCADO BBQ TACOS
Portions : 4 - Preparation : 15 minutes - Cooking : 8 minutes
Ingredients
- 60 ml (4 tablespoons) olive oil
- 1 pinch cayenne pepper
- 5 ml (1 tsp.) paprika
- 15 ml (1 tbsp.) Cajun spice blend
- 1 lime, zest
- 60 ml (4 tbsp.) wine vinegar
- 3 Québec chicken breasts, cubed
- 125 ml (1/2 cup) white vinegar
- 125 ml (1/2 cup) sugar
- 45 ml (3 tbsp.) salt
- 2 red onions, sliced
- 16 cherry tomatoes
- 8 wheat or corn tortillas
- 4 lettuce leaves, chopped
- 2 avocados, sliced
- 120 ml (8 tbsp.) Greek yogurt
- salt and pepper to taste
- 8 skewers
Preparation
- Preheat the BBQ to maximum.
- In a bowl, combine olive oil, cayenne pepper, paprika, Cajun spices, lime zest, wine vinegar, salt and pepper.
- Add the chicken cubes to the bowl to coat and marinate for 10 minutes.
- Meanwhile, in a pot of boiling water (2l / 4 cups) add the white vinegar, sugar and salt. Plunge in the onion rings and cook for 3-4 minutes. Then remove, drain and set aside.
- Alternately skewer chicken cubes and tomatoes on 8 skewers.
- Cook on the BBQ grill for 4 minutes on each side. Set aside.
- At the same time, lightly toast the tortillas on the BBQ grill.
- Top each tortilla with lettuce, avocado slices, chicken cubes, tomatoes, onions and Greek yogurt.
